I've been exploring Texas whiskeys for the past year. I learned that because of the differences in climate between Texas and states like Kentucky and Tennessee, Texas whiskey doesn't have to age as long to develop good flavor profiles - a two year old Texas bourbon can taste better than a seven year old Kentucky bourbon, for example.
Some of the distilleries in Texas are also making bourbon with a higher percentage of corn. If I remember correctly, the Ironroot Harbinger (Denison, Texas) is 93% corn, 7% Rye. They use three varieties of heirloom corn and a non-GMO corn - all grown in Texas. Harbinger won the World Whiskey Award for World's Best Bourbon in 2019. (When I bought my bottle, it was $52.)
Balcones (Austin) Baby Blue is 100% roasted heirloom blue corn. It's barrel and aged the same as bourbon.
Both of these were very drinkable and paired well with a pipe. I found I liked the Harbinger with an English or Va/Per while the Baby Blue was better with an aromatic like Autumn Evening.

Going with some Casamigos Blanco Tequila tonight with a side of soda with lime. I much as I dislike George Clooney, I really like tequila. I wouldn’t buy a bottle of this, but a friend gave it to me and I can’t see it going to waste😉. It is pretty good tequila though🙂
@PappyJoe I looked up the Plantation Rum and found their Pineapple Rum. Holy Smokes! They actually had it at the liquor store here👍🏻
My dad occasionally drank either Mr. Boston BlackBerry Brandy, Peppermint Schnapps or Cream De Menthe. The Brandy takes me back (not a fan of peppermint). I can remember maybe seeing 2-3 pints of each over the years total....he pretty much stuck with beer. He also drank Morgan David Concord Grape or homemade chokecherry wine occasionally. I remember he let me have a taste of them when I was little...like 10-12, maybe younger😳.....I wonder what kind of hell would be unleashed for such a thing now days? They probably would have taken us kids away and put him in jail🤔 Nobody can have any fun anymore. What can I say.....does Mr Boston make me a cheap drunk or a connoisseur of all liquor? I like what I like, and it brings back memories.
@RockyMountainBriar Drink what you like and let everyone else be damned. I've always looked at Mr. Boston liqueurs as good for mixers and cooking because they are sometimes more flavorful than more expensive brands. That being said, my dad used to keep a bottle of either Mr. Boston or Dykruper Creme de Menth in the refrigerator for use as cough syrup before going to bed - think of it as a more flavorful NyQuil.
Enjoying a mix of freshly roasted Ethiopian Sidama, Mexican Alturra and Brazil Cerrado coffee. Next up Not Your Mother's Wine Cooler, a fifty fifty blend of Martini & Rossi Sweet Vermouth and Gosling Ginger Ale.

1 shot of egg nog
6 oz. black coffee
I guess the egg nog makes it health food...😏
The only change I’d make is to use dark spiced rum
