@RockyMountainBriar Down here in the lowly south, we call that "Frito Pie." There was a small "snack shack" just off of school property at the high school that was only open for about three hours a day. They sold hot dogs, soft drinks, chips, candy and the like during lunch time. One of their specialties was Frito Pie - they cut the top off a small back of Fritos, spooned in some chili and topped with cheese. I think it was only 25¢ back in the late 60s.
Prime rib burgers over Yukon gold garlic and parsley mashers with Guinness gravy topped with portabella mushrooms and fried onions served with county green beans and a cool Guinness extra stout. This is the ultimate comfort food!
Tonights happy hour is lemon vodka and soda paired with orlik dark Kentucky (really good!). For dinner, marinated baked salmon, baked potato and broccoli with mixed herbs. Delicious!!
I’ve never really spent any time in the south, although I have been in Louisville, KY, and Memphis, TN for short stays with a short day trip across the border to Mississippi and the “Riverboat” Casinos. It seems I may have been reincarnated or something🤔. I’ve always thought of myself as a “Northerner”…definitely NOT an “Easterner”. Here is another “Southern” thing that I just love. I found these a few years ago at WalMart, I’m not sure how these canned spicy ones compare to roadside fresh, but dang these are tasty😋
I whipped up some homemade spaghetti with my grown up Pla-Doh extruder machine and threw together a quick sauce of a can of diced tomatoes and chilis and a can of stewed tomatoes, popped in some butter and a bit of herb infused olive oil and various spices And a portion of frozen mixed peas and carrots. It’s topped with a generous portion of Kraft Parmesan/Reggiano cheese…not high brow, but it’s good enough for me. After dinner, I’m going for the C&D “Black Cherry” in the Falcon.
I only get eggs over-easy or sunny-side-up, and good thick cut bacon on weekends because I don’t like to get up early and make breakfast before work. I look forward to it most weekends. My bad luck today🙂. I got a double yolk egg, perfect for dunking toast…yah! Crap, both yolks broke just as it hit the pan….and it was a perfect crack on my part😖. The other two hit the pan beautifully👍🏻. Dammit, my Flat White is 3/4 gone. I guess I need to make another. I didn’t want my eggs to get hard or cold, so I turned off the heat, notice, it’s a big ass cast iron skillet, here’s hoping🤞🏻. That’s a big nope, it took too long to make another espresso flat white, my freaking eggs all went over hard😢. Oh well, bacon, eggs, and buttered toast are good no matter.
@Balisong You are right, should have had the géométrie, that C&D “Black Cherry” sucked, luckily, the Falcon meer is a small bowl, so I didn’t have to put up with it for too long, 45-60 minutes?
@RockyMountainBriar Yeah I had chicken and beef ones. I only showed the chicken ones grilling. The big stack has both before I cooked them. We also had some appetizers
