Pairing with some local pinot noir from the Biltmore estate. Peeled the tomatoes and the skins will be dried and used for toppings on salad. They have a mild sundried tomato flavor. while the tomatoes cook down, I'm starting on the sausage, garlic and onions. pounding out the beef

mmmmm looking good! pan sear and lightly cook the braciole then add all the meat to the sauce and let simmer.

Pork Chop Pozole/Posole with some cruncy raw add-ins, radish, cabbage, carrots, green onion, cilantro, and a twist of lime. A frosty beverage of lime soda water for refreshment.

@Londy3, @opipeman It is traditional made with pork shoulder, but I tried a couple of pork chops because they are easier and quicker for a bachelor. It was the same as using the shoulder. Also, it is usually served with fried corn tortillas for topping as well.
