Dinner tonight, homemade red sauce over top of some spaghetti and topped with a bit of Parmesan, and some broiled Parmesan cheese bread. I used my oven for four slices tonight, I usually use my toaster oven for a couple. It seems, the big oven is a bit trickier to get an even browning, they got a little “dark” on some of the edges. They were still tasty. Now, for an after dinner pipe🤔
@DSturg369 I think you have it backwards….none of that Blue Cheese Crap! I mean, come on, it’s blue, it’s spoiled, it can’t be good😬 That stuff makes my tongue burn, that ain’t right😳. Ranch good….well some types/brands of Ranch are nasty, I agree. And…isn’t broccoli, kinda like parsley or kale, supposed to be a garnish and thrown in the garbage? Actually, I eat the parsley and kale garnish, I wonder why I don’t eat the broccoli🤔. Have you ever tried battered/coated deep fried fresh parsley sprigs? Mmm, tasty. Actually, a little FYI in case some don’t know, the parsley “garnish” is on the plate as an after dinner breath freshener.
Appetizer/dessert smoke is GLP Ashbury in a Pride and a Woodchuck hard cider. Dinner is leftover roasted chicken wings and roasted butternut squash to be followed by Thursday Night Football!
My German father in law is getting up there in age. This year he was disappointed he couldn't make it to the oktoberfest, might be the first year he couldnt get himself there. As a birthday gift I cooked him some home made sauerbraten, sauerkraut and spätzel
@Zouave1864 My father always talked about liking sauerbraten, but I have never had it. There was a German restaurant here that had awesome food, but the damn “pandemic” sunk it🙁. I thought about trying the sauerbraten, but the recipes I have read have spices that I think I may not be too fond of. I’d still like to try it someday. It looks like it is quite involved to make, and for a single person, it seems it may not be worth the time for me. The restaurant also had a dish they called “The Best Wurst Plate”, it had 3 or 4 different types of wurst sausage (a lot of food) that I would have liked to try, but it was $30-$40 before todays prices. They had the best schnitzel, with four different gravies. They had a day of the week that the schnitzel was all you can eat, and at a reasonable price. It was lunch, so I had to stop short, but I did try all four flavors…I could have packed away more had I had time😋. It’s probably good that I didn’t have the time😬.
@RockyMountainBriar if you want I can give you my recipe. It takes about a week to marinate the beef, but it's absolutely worth it. Not too many spices. Clove, bay leaf, peppercorns, red wine vinegar, a handfull of vegetables....that's about it I think? The gravy is the left over sauce with ginger added. All in all its pretty easy. You just have to turn the meat over inThe marinade twice a day for along as you want to season it. This time I was pressed for time so I only did it for about 48hrs. But ideally I like a week.
Angus Irish burgers over Yukon Gold mashers topped with Guinness mushroom & onion gravy topped with crispy fried onions and a side of steamed buttered broccoli.
I haven’t decided on an after dinner tobak yet, but it will be something from my recent “Trick or Treat” gift. Dinner tonight is some simple potato soup made like my mom use to make…with a couple of my personal additions. It just green onion, celery, and slivers of jalapeños lightly sautéed in some olive oil and butter, then add the potatoes and water to cover with a chicken bouillon cube added. Boil until the potato’s are just getting soft, drain the whole works, then back in the pan with some whole milk and a 1/2 stick of butter, some salt and black pepper, and the spice that makes the difference, Montana’s own “Alpine Touch”. Mmmmmm😋. Bacon would kick it up another notch, but I went for the version my mom made, simple….well…..except I added the celery and jalapeños😬. Note to self: add more jalapeños😉. I have a mug of hot Lapsang souchong tea with a tablespoon of real maple syrup, and some iced soda water for drink.
I didn’t get a pipe last night, and I went off-track this morning. I decided to smoke the 2023 PPN XL5BC loaded with some “Triple Play” from 2012. I had a few bowls of Corn Flakes for breakfast, and I have some Rooibos Tea with a cube of sugar. The tea and aged Va/Per/Dark Fired tobacco is a great pairing.

Yep, not a big fan of clove or ginger in my main courses, it’s the reason I have shied away, they are great in desserts though.
