Boxty is basically an Irish Potato Pancake. I would have that Irish Breakfast in my Wife's Mother's Kitchen and go out Fishing, Ireland being in more northern latitudes would stay bright till 9 PM I'd go home to Dinner then. I never got hungry till then.
@woodsman - Black Pudding and White Pudding you describe sounds a lot like the Boudin sausage in Louisiana. The White pudding would be the Boudin most commonly made and sold commercially - it's basically ground pork and rice with onions and spices. Boudin Rouge isn't found very often unless you are deep in Acadian parts of Louisiana. It's also called Blood Sausage.
I think a lot of people substitute corn beef either because of taste or easier to get or other personal reasons. Myself I like Sausage and Cabbage, Potato soup, potato cakes and Irish Whiskey not in that order though. lol I do not drink Green Beer, I don't always wear green but I do listen to traditional Irish Music, going to smoke Irish Blend tobacco, Drink Irish Whiskey and later that evening going to have Irish Cream.
I have my complete St. Patrick's Day itinerary planned out from the meal, to the pipe and tobacco I plan to smoke, right down to the movie I intend to watch.
The meal is of course corned beef and cabbage. Our Americanized version of a traditional St. Patrick's Day meal is probably about as authentically Irish as suggesting a can of Chef Boyardee spaghetti is a suitable replacement for my Sicilian Grandmother's home made pasta; or finding CHUN KING Chop Suey from a supermarket freezer on the menu of a Chinese restaurant; or serving a Taco Bell Gordita at an authentic Mexican restaurant. We wacky Americans put our spin on everything ... but in the case of corned beef and cabbage ... at least our hearts are in the right place. I would have included a bowl of "Lucky Charms" for breakfast, but that's just taking it a bit too far, as well as stereotypical and disrespectful ... although 'Lucky Charms' are magically delicious.
My pipe of choice for the day will be my Peterson Dracula Pipe. Not only is the pipe from Dublin, but Bram Stoker, the author of Dracula was Irishman as well.
The tobacco I smoke all day on St. Patrick's Day will be CAO's Eileen's Dream. Don't think it has a thing to do with Ireland but it has a shamrock on the tin. Best I could do.
And my movie for the evening will be Walt Disney classic starring a youngish pre-James Bond Sean Connery - "Darby O'Gill And The Little People".

Go ahead and have them lucky charms, you know us Irish don't get all bent outa shape over little things like that. I am having potato cakes and bacon for breakfast, cabbage and Sausage for dinner (not sure for lunch) going to smoke some Erin Go Bragh out of my Mr. Brog Pear wood pipe, drink some Irish Whiskey and then Irish Cream (Later) while watching some of Conner Mcgregor's older UFC fights.
For the horror fans looking to spend St. Paddy's day a little more unconventional, you might consider one of the best ... and possibly the only Irish Zombie movie ... "Dead Meat". Great oddball characters, action galore, comedy, zombies, and man-eating cows infected with mad cow disease. Just bring your Shillelagh to beat back the zombie horde.

IMHO - A Kelly green stem would have been more appealing and proper for a St. Patrick's Day pipe. But if anyone wants to buy one of those for me, I won't complain...
